  • Lunch… A Simple Pleasure

    What to have for lunch? How about eating what you love. This here pretty much sums up some of my loves. Heirloom tomatoes, avocados and cottage cheese. Yes… I LOVE cottage cheese! I know most of you would put some fresh mozzarella on here instead of the cottage cheese and that works too. After all… this is about eating what YOU love.

    Sometimes simple is best don’t you think? Simple, good, fresh ingredients. Three more things that I love. There are enough complicated things in our lives. Lunch definitely should not be one of them!

    So here is what I threw together for lunch today. I sliced up one ripe heirloom tomato. Half of an avocado, cut into quarters and a nice scoop of cottage cheese. Tomatoes and avocados love salt and pepper so I gave in to their infatuation with each other. I sprinkled a little chili powder on the avocados and cottage cheese (a little kick keeps life and lunch from being boring) and topped it with a a small amount of julienned fresh basil leaves. No recipe needed here. And it was perfect.

  • Tomato Soup

    It was a cool and rainy week here last week and in our household… that calls for some good soup (with good rolls or bread on the side)! I don’t know about yours… but my family loves soup! This one here is probably one of my kids all time favorites. In fact one of my son’s filled a cup up RIGHT AFTER he just finished his bowl so he could “down” some more. He just can’t get enough of this one! And that’s ok by me because this one is healthy and so good for you. I know you and your tomato soup loving people will love this one too!   • Evan’s “Start to our Day” Smoothie!

    I decided I would post the ingredients and measurements for the smoothie I drink every morning that I posted on instagram yesterday. I know that if you don’t get the right balance of everything, especially the kale, it my not turn out so tasty. This is tasty, smooth and so good for you! I love starting out my day right with this smoothie…. even if I eat bad the rest of the day!

    Here’s all the ingredients you will need.

    First, I dump in my hemp protein powder, flaxseed and chia seeds. There are so many benefits in these for your body and your health.

    Next, in goes the almond milk and banana.

    Next.. a huge amount of kale! You are pretty much drinking down a kale salad! Another huge healthy power food. No worries though people…. it will not taste bitter or fibrous…. I promise! At least if you follow my steps.

    Last of all… pour in those yummy frozen berries! I always use frozen so my smoothie is extra cold and I love the texture of a smoothie that has frozen fruit in it.

    I have a Vitamix blender, so I am going to tell you how we get it done with this blender. First, start at the low setting on number 1.

    Very slowly start dialing up all the way to the highest number. The key word here is SLOWLY!

    Once it is pretty much mixed in, continue to blend at the low setting at the highest number for at least 1 minute.

    Then turn it to high and let it blend for an additional 30 seconds to 1 minute. It will be very smooth.

    Pour it into a very large tumbler and have at it! It also keeps you satiated for a long while! There you go… a huge breakfast and you can feel good about it! Not too shabby!

  • Bring on 2014 With an Amazing Dip Recipe!

    I don’t know about you, but me? …. I am way excited to bring on the new year! I loved 2013 and look forward to what 2014 will bring! Years past (when the hubby and I were “young married’s”) we loved to go out to dinner with a large group of friends (sans kids) to celebrate the big event. Now? We have learned that our kids are growing up all too fast and we want to spend every second we can with them. Our perfect New Year’s Eve is spending it at home with our kids (At least the ones that want to stay home with us! And more and more they are wanting to… hooray!), playing all sorts of games, eating all kinds of great food, maybe watching a flick…. all cuddled up on our large sofa and making as much noise as we can at the stroke of midnight! It is truly a night of perfection to me. We usually get some extended family members stopping in at some point and we love it… the more the merrier! I look forward to this favorite night of mine every year. 

    The food is an important part of the night as it is at every party! I want to share with you an amazing dip you can and should share with those lucky enough to bring on the new year with you! It is an amazing, baked artichoke dip I serve in a bread bowl along with chunks of yummy bread. It is a cinch to make so be sure to try this one out!

    Another favorite of mine is a well put together cheese platter such as this one.

    What makes a cheese platter a good one? One with a variety of cheeses (hard, soft, mild, medium, sharp, goat, sheep and cow’s milk cheese varieties). Above, we picked some with dried apricots and cranberries in the cheese… nice sweet and savory combination. I like to add honey, fruit (grapes, pears, figs are all good choices), and nuts (I also added a little olive tapenade for my honey up there) on the platter to accompany the cheese. You should serve your cheese at room temperature so this is a great thing to have out for your shin dig. Serve with crackers or thinly sliced crusty bread. Another great addition is some aged, dry salami and or some cured italian meats such as proscuitto, coppa or bresaola you can place on a small cutting board right next to the cheese. These are perfect to snack on throughout the night and helps balance out all the sweets that we nibble on all night.

  • Heavenly Hot Chocolate with White Chocolate and Peppermint Stir Sticks

    This time of year, one of the best treats to warm your soul and tummy is my Heavenly Hot Chocolate served with these White Chocolate Peppermint Stirring Sticks. 

    They are both a snap to make and your friends and family will love you for it. As I tell my friends… drinking my hot chocolate is an “experience!”

    To get started, you will need full sized peppermint candy canes. The most labor intensive part is unwrapping each candy cane, but I found that unwrapping them this year was a breeze… thank you candy cane companies for making it a much less frustrating experience!

    Next, I cut my candy canes instead of breaking them and they cut perfectly and exactly where I wanted ( I use Cutco scissors). I cut them right across from the end of the cane part to get them all the same length. I then put all the curved cane parts in the food processor to get finely crushed. 

    Take your white chocolate pieces or chips and melt them (Make sure you melt enough chocolate to dip the marshmallow in. It should be at least a couple inches deep if not deeper). I microwave mine in a glass measuring cup (I start at 1 minute and add 30 second increments at a time until they are melted. You have to stir with a little spoon or spatula to check if they are melted through as the chocolate holds it’s shape even when melted). 

    Take your candy cane sticks and pierce a full sized marshmallow with it making sure it stands straight. Some marshmallows in the bag do not have a flat top and bottom. Make sure to use ones that are flat and will stand straight when pierced with a peppermint stick (Jet Puff brand has better shaped marshmallows than the generic brands).

    Dip the marshmallow in the white chocolate making sure to remove some of the excess chocolate, rotating it around the sides of the bowl.

    Immediately roll it in the crushed candy canes, making sure to cover the bottom and sides.

    Place on a parchment lined surface to cool and harden.

    Serve these with my amazing hot chocolate and some gingerbread men on the side, snuggle up by a warm fireplace and enjoy the season at  it’s best!

  • Private Class/ Dinner Party and New Recipe!

    THIS happened last week! A private cooking class/ dinner party with these fabulous ladies! A perfect girls night out. I invited these ladies over with the gals from Lunchpailsandlipstick and together we had a ball. A most delicious ball! These talented ladies are the brains and success behind Ascot Friday (Laura also does Target Does It Again and Ascot & Hart), Saint Eve Jewelry, Nena and Co., Lunch Pails and Lipstick, Rachel Thurston Photography and Morgan Smith from Bugaboo. Goodness these ladies are beautiful, over the top creative, talented, incredibly sweet and fun to be around! Be sure to check out their websites, blogs, and or instagrams!   • Gingerbread Men… A Holiday Tradition

    Gingerbread Men

    At our home, making these gingerbread men is a yearly tradition. It actually started when I volunteered to make them for my kid’s kindergarten classes when they were reading about The Gingerbread Man. As a class, they made one big gingerbread man and took it to the school kitchen to bake it. When they returned to the kitchen to get the gingerbread man after it was fully baked, they discovered it was missing. It had run away! Off the class went to find the runaway gingerbread man throughout the school. After being told about the many gingerbread man sightings… it eventually led them back to their classroom where the baked big gingerbread man was found along with a gingerbread man cookie for each student. I loved to make these and the big gingerbread man for the classes throughout the years. My kids loved getting into the decorating action and it became a favorite yearly family affair. 

    I didn’t always like gingerbread men. Most were dry and not very tasty. So I sought out to make good ones. Ones the kids would love to eat as well… as they can be the most picky. Here is my recipe and I hope you enjoy it and make this your family holiday tradition too. Just make sure to keep an eye on the oven as they bake….. or they may just run away! Mischievous little guys!

    Here are the ingredients you will need.

    Give them a good mix. Smells wonderful!

    IMG_7134Take half of the dough and form it into a round disk and place on a well floured surface. Make sure to flour the top of the dough too before rolling it out. You will roll it out to about 1/4 inch thickness. I like mine soft and thick. 

    IMG_7137Cut out as many as you can (my younger son did all the cutting out). Re- roll the dough and repeat. Do this for the other half of the dough left in the bowl. I use a thin, well floured spatula to transfer the unbaked gingerbread men to a cookie sheet.

    Be sure to lay a piece of parchment paper on your cookie sheet first. These bad boys are ready to hit the heat. In the oven they go!

    The fun part…. decorating them! I put the icing in a pastry bag to make decorating them easier. Two eyes, a smile, buttons and all the trim. Teamwork!

    We love the taste of M&M’s much more than red hots, but you can use what you like for the buttons. I also love the pop of color they give.
