class recap

  • Jenny’s Basics Class Recap

I literally threw this class out there in less than one week and the class sold out almost immediately. So I added another day and that also sold out. I knew some of you wanted to learn my basics but I guess there was more than just” some” of you that were interested! There was so much goodness taught and devoured those nights!

basic 1I don’t think there is a better tasting roasted chicken than this one. Once my family smells it roasting in the oven they get so excited! I like to make a lot of it so we are sure to have lots of yummy leftovers. Here I am applying the rub.. the amazing rub.

    IMG_0765

These babies are done! Perfect crispy skin and the most moist, flavorful meat. My mouth starts watering about now.

    IMG_0705

My signature salad has candied nuts in it so I wanted to share how easy it is to candy your own nuts. So much yummier and a ton cheaper than what you get at the store. An added tip I taught to my classes. One that they will use time and time again!

    b 7

Here it is… My Signature Salad. Easy to make… dressing and all… but flavor that quickly becomes a favorite of all that taste it. Double yum!

    b 4

Of course, my sandwich bread is one of my basics that I make many times a week. Too good to keep to myself! We walked through the process so everyone would be sure to have the most delicious and beautiful loaves in their own kitchen.

    b16

Just like these… hot from the oven. Is there a better smell than fresh bread baking in the oven? I think not!

    b 14

In my home, jam and bread belong together like burgers and fries… chips and salsa… meat and potatoes… Jim and Jenny! My kids favorite is strawberry so that is what I taught. I go through a lot of mason jars!

    b 19

You bet everyone sank their teeth into their own warm slice slathered in butter and this jam. Yes… it was a heavenly experience. By the way… I loved seeing all the posts on instagram of the loaves of bread you all went home and made! They all looked beautiful and I am sure your family was in heaven! I love when you share with and tag me in your food posts!

    basics 2

My beloved Bosch mixer holding the activated yeast for my cinnamon rolls. This appliance is one of my “basics” I could not live without!

    b 10

I think everyone needs to know how to make good cinnamon rolls. They are too good to not share with others. I bring such joy to my family whenever I make them and that brings me joy! One of the best treats ever.

    b 17

    I mean… come on.. anticipation!

    b 18

Time to indulge! And indulge we did!

    b 6

It was a night of learning and eating some of my most basics that I make regularly in my home. I hope they become basics in everyone’s home that came too! I am pretty sure this Sunday is cinnamon roll day for most that came. Looking forward to seeing your posts so don’t forget to tag me @jennyevansgatherings!

    b 20

Once again… I forgot to take pictures of all my Gathering friends from these two classes but I was able to grab the last stragglers from my last class. Wish I remembered before they all left! I know I have said it many times.. but I seriously love these people! Thanks for a great time and gathering! XO

  • Vegetarian and Amazing Class Recap

    IMG_0685

It was a fun and delicious night that surprised most people that came. I don’t think they realized just how tasty vegetarian can be! A lot of people signed up because “I knew everything you teach is so delicious!” Thank you for your vote of confidence in me and I am glad I did not disappoint!

am preparing a spaghetti squash for our first dish. SO tasty and SO healthy. Yes those two things can exist together and this dish proves it!

    IMG_0717

This is what it looks like after we roasted it. Looks just like spaghetti!

    IMG_0725

And this my friends is the finished product. Let’s dig in!

    IMG_0692

Here I am preparing the zucchini for the amazing cheesy zucchini rolls.

    IMG_0697

Squeezing the San Marzano tomatoes for the marinara. Sometimes your hands are the best tools!

    IMG_0701

One of our tasters for an upcoming class. Chinese Almond Cookies. Heavenly and highly addicting!

    IMG_0767

Cheesy Zucchini Rolls. Yes.. there are no words for these. Just close your mouth and eat. Mmmmmm!

    IMG_0733

Sauteeing some veggies for the Bulgar Wheat Salad. Good stuff in this pan!

    IMG_0735

Dump those sauteed veggies in with some other good stuff and you’ve got this. Pretty much perfect for any time of the day or night. Warm, room temperature or cold. Gotta love a versatile dish like this one!

    IMG_0757

I made believers out of tofu haters (Like me) with these tofu lettuce wraps. Once again… no words. You won’t believe it’s not ground meat either. The texture and taste is just like ground meat. And the sauces made it over the top good!

    IMG_0768

Last but certainly not least is my veggie taco with the “ridiculously good green sauce”! Yes that sauce will probably become a household staple to put on everything. Can’t get enough of this stuff!

    Image

Photo op with an amazing group of ladies. In fact, Francie (far left) takes the prize for the person that travelled the furthest for my class! Francie came from Tokyo, Japan and is here for a week to celebrate her friend Cora’s birthday (Far right). Now that is a good friend! She came to my class before and it is so nice to have her in my class again!

    Image 1

Two new friends I met in class… Emily and Mandy. My favorite thing about teaching these classes is making new friends from all over! Goodness… I am lucky!

    IMG_0690

I finally remembered to take a class picture (minus two that already had left) on my third and final night. Seriously… such beautiful, amazing and talented people I am surrounded by. Thanks to all that came… it was fun, huh?! XO

    DSC_0169

Seriously people… I LOVE this amazing group of ladies that joined me for a fun and delicious night! For those of you that have attended my classes, you know how I like everyone to introduce themselves during the class. When you come to one of my classes, I consider you an instant friend and so of course I need to know your name! It took us so long to do the introductions because we learned so much about one another and each other’s talents. And it was funny to find out that I had some sort of family connection with so many that attended!

    DSC_0098

I taught my class at my brother and sister in law’s vacation home in Lehi and it was a perfect place! I even survived the class with one oven… yes you heard me right…. ONE oven! A huge thank you to Young and Sharon for sharing their beautiful home!

    IMG_0773

I was either giddy or delirious or both from a fun but busy day that started early taping a cooking segment at KUTV.  Regardless…. I was having a blast of a day!

    IMG_0808

For the fifth time I got to teach how to make the most amazing roasted cauliflower dish ever! Yes… this is the fifth time to teach this delicious menu. It was popular! I love being able to share all this  goodness with others!

    IMG_0728

Making that delicious cheesy spoon bread again. So addictingly good!

    IMG_0669

Preparing the bread for our crostinis. Yum!

    IMG_0787

Yes… another picture of preparing the chocolate molten lava cakes. I don’t know about you, but I never tire of chocolate or looking at it!

IMG_0703Not sure what I am doing here, but it sure shows my mood when I teach any of my classes. Do you think I enjoy it just a little bit??

    IMG_0836

Getting the final preparations done. Spooning some sauce over the steak crostinis. Steak, bread and cheese…. what’s not to love?

    DSC_0172

    Time to feast!

    IMG_0885

There aren’t many things better than sitting down with friends (old and new) and eating a good meal.

    IMG_0887

Lots of family connections here like my sister in law’s sister Emma with her dear friend.  Another fellow lover of making and enjoying good food!

    IMG_0889

Yes… I think it was an enjoyable night for all that came!

    IMG_0899

My new friends Danielle and Nan. Found out they are related to my daughter in law and some dear friends back home. Small world!

    IMG_0892

I met Krista today at the studio! She was taping a segment right after me. She is on the noon news doing a cooking segment every Monday on KUTV. Be sure to check out her website!

  • Valentines Menu Classes Recap

As most of you know, this menu was so popular I taught it four times! For me, that meant four nights I got to spend with some fabulous and fun people! I definitely made a lot of new friends… love that!

    IMG_6078

This was date night for most that attended that night. Makes for a fun date! I also had a cute group of girls that celebrated birthdays in my class!

    IMG_9949

I taught how to properly sear a steak in preparation for our main dish. Nothing like a good steak!

    IMG_9911

I introduced Spoon Bread to most of the people in the classes. They now realize what they have been missing.

    IMG_9774

See what I mean? Smooth, creamy, cheesy melt in your mouth goodness!

    IMG_9944

This here is my “Jenny”  chimichurri. Let’s just say it’s a must to top on most anything!

    IMG_0044

We used it to top our amazing Roasted Cauliflower dish. Some amazing flavors in that cauliflower too!

    IMG_9796

This Blue Cheese dressing is absolute perfection! Right class?

    IMG_0124

And this is a Wedge Salad that can’t be beat! Yes, I know it will be a favorite in everyone’s recipes.

    IMG_9826

Making the Chocolate Molten Lava cakes. Pretty much the perfect dessert. Best tasting batter in the world. Maybe I have eaten a few spoonfuls here and there. You couldn’t resist either… trust me.

    IMG_0137

Steaks on Crostini are ready! Let’s eat!

    IMG_9777

The amazing ooey, gooey, warm filling finish. These were a bit hot to serve so they were literally oozing out chocolate lava, but I didn’t hear any complaints!

    IMG_7739

  • Quick Dinners 2 Class Recap

My last “quick dinners” class was so popular, I got a lot of requests for another one and I was happy to oblige. As I was telling my classes …… we are busy people (I get it because I am one of them!), and I know it is hard to put together a dinner for our family in our hurried lives. But I also know that we make time for the things that are important to us. I can’t tell you how many times I have been tempted to pick something up on our way home from one of my kid’s practices in the late hour….. but I know their bodies and bellies will thank me for a home cooked meal where I know every ingredient that is going into it. It is then that I decide I can take 30 minutes to make a delicious meal that will be done by the time the kids get out of the shower. We all feel a lot better for it. Most everyone can find 30 minutes to make a meal. And these aren’t just any meals… no.. these are great dishes your family will love you for!

    IMG_8349

My favorite go to fast dinner is my pizza… all from scratch (dough and sauce too!). I can whip two of these babies out quicker than I could call for delivery and have them at my doorstep. This is always a family favorite. This tasty beauty is one I made in one of my classes. Yes… everyone oohhhed and ahhhed and tasted the difference in “from scratch” pizza to the “other” ones.

    IMG_8345

This is another crowd pleaser no matter who you are. Pasta Carbonara… YUM! Comfort food at it’s best and boy is this fast to whip up! And I whipped up enough for 20 people lickety split!

    IMG_8381

Sometimes we need to go lighter and this dish fits the bill. I taught this Soy Honey Chicken that goes perfectly with rice or steamed or sautéed vegetables. Perfect for you low carb eaters as well as hungry kiddos

    IMG_8403

Here I am demonstrating my Carnitas Calzones. These babies are so dang good!

    IMG_8437

Just look at these! All ready to serve after a quick five minute bake in the oven. Mmmmmmmm!

    IMG_8354

And last but not least, we learned how to make these fancy looking stuffed pork chops. Who knew quick could look this fancy?   Company coming over for dinner? No worries… these will take no time at all…. even with the amazing sauce! The most perfect pork chop dish ever… seriously. Just ask anyone that attended the class.

    IMG_8435

You know I give all these dishes a two thumbs up! Happy to bring deliciousness and convenience your way!

    IMG_7692

I have to give a huge shout out to my awesome assistants. This beautiful one is my niece Lisa. Luckily my other assistant, Chelsea, shot this photo of her. A big “Thank you!” to Lisa, Debbie, Chelsea and Sarah! Love you all!

    IMG_7688

Thanks to all that attended and feasted the night away! Now get cooking…. you have no more excuses!

  • Tacos Class Recap

    IMG_6934

I must say, my house smelled wonderful way before the three tacos classes I held last week. The aromas of the chili’s, garlic, onions and the rest of the produce was mouthwatering and the colors were so beautiful!

    IMG_7108

Of course the first thing you need to learn to make for a taco is the tortilla. And that is just what we did… the whole process… making the dough, flattening it out, and cooking them. Yes, there is a technique to follow.

    IMG_7143

    Freshly made!

    IMG_6997

We made two kinds of yummy salsa’s. Here, we are making the avocado salsa.

    IMG_7127

Here is the second one…. Arbol chili salsa. It is amazingly flavorful!

    IMG_7041

Prepping for the Mexican pickled onions.

    IMG_7113

Here they are marinating in their juices. Don’t knock them until you have tried them. They are the perfect compliment to any taco!

    IMG_7070

My hubby is prepping the pork for the Yucatan braised pork. Getting it ready for it’s soak in my out of this world marinade.

    IMG_7163

This, my friends just may be the best guacamole ever. It was certainly a huge hit!

    IMG_7191

The finished product….. ready to be passed around and devoured with the fresh tortilla chips. Major yum!

    IMG_7048

Here is the corn cake fresh out of the oven. Of course it is not fully ready. We learned to make all the fixings that is served with amazing dessert!

    IMG_7215

Next, we headed outside to learn how to grill the perfect carne asada. It smelled so good!

    IMG_7123

Just look at that. Unbelievably delicious!

IMG_7121Tables were all set and ready to go. A perfect summer set up for our outdoor feast!

    IMG_7142
