Burger Bar on the Fourth of July… Why Yes!

Our family is fortunate to live not too far from the beach and even more fortunate to have family that has a house by the beach. The Fourth of July is spent every year on the beach …. our family’s favorite spot to be. Then we head to my brother and sister in law’s beach house where we are greeted with BBQ hamburgers, hotdogs, chips, fruit, salads and amazing dessert (I am in charge of the dessert every year…. humble pie, eh?) where we all gather as a family. It is the best day!

I know that a lot of people across the good ole U.S. of A are probably serving the same menu. But let’s take it up a notch or ten! I have for you some great burger topping ideas that will take any burger from ordinary to extraordinary! As well as ideas of thinking outside the bun. I mean come on….. don’t you think it is time to switch things up a bit? I have such a great and unfussy (aka… easy) menu for you to serve this year. Let’s celebrate in the most tasty way with a Burger Bar!

IMG_6605Naan bread (I picked these up at Trader Joes). A perfect substitution for the ordinary bun. Ciabatta rolls are another great idea. Experiment on your own… just make sure it will hold up to the meat and not fall apart. Or even better… offer a variety and let your guests pick their favorite!

I went Italian with this burger. With marinara sauce on one side of the bread. Fresh mozzarella melted on the patty. Pesto spread on the other half of bread with some red onions and sun dried tomatoes. This was packed full of flavor!

Head South of the border for these flavors. A ripe, juicy tomato, a moist, tender patty with melted jack cheese, a ring of a sweet onion, roasted poblano chiles and guacamole. To roast poblano chiles, wash and cut the chiles in half. Remove the seeds and the stem. Lay halves on a baking sheet and spray both sides of the chile with an olive oil cooking spray. Roast in a 400 F oven for 15-20 minutes. Once they are cool, peel off the skin, and slice in about 1/2 inch width long pieces. Delish!

Make an easy garlic aioli for this one. Take 1 cup of mayonnaise and add 2 tsp. of garlic paste. Add a nice squeeze of fresh lemon juice and season with some salt and pepper according to your taste. There you have it… an easy garlic aioli that will add amazing flavor to this or any burger! Now let’s get back to business. Spread the garlic aioli on both sides of the bread, top one side with the patty that has melted gorgonzola cheese atop as well as some caramelized onions. (to caramelize an onion, slice the onion into nice thin, long slices. Saute in some olive oil in a skillet over medium  high heat until they are golden with a hint of some browning. They should smell sweet at this point because caramelizing brings out the sugars in the onion and makes them sweet and wonderful!) Top the other side with some sauteed mushrooms (don’t forget to salt and pepper the mushrooms!) and you have yourself another grown up fine sandwich! Mmmmmmm!

Here is my final example. I could go on and on.. but where would I end? The possibilities are endless! For this one, I started with a mayonnaise that I mixed with a bit of horseradish to give it just a bit of a kick. You can add as much or as little as you like according to your taste. Then a juicy patty with some melted sharp cheddar topped with some crushed, thick cut, extra crunchy cheese flavored potato chips (the potato chip flavors are also endless….sour cream and onion, plain, salt and vinegar, BBQ, Doritos, Fritos, etc… just make sure they are extra thick… it gives them crunch staying power. On the other half of the bun, add some mustard if you like, some lettuce and a fried egg (runny yolk a must!). I have to admit, after we tasted all these (I did love them all, by the way) this one was my absolute favorite. There is something about the crunch and saltiness of the potato chips that contrasts wonderfully with the soft and juicy meat and runny fried egg. (I was that girl in school that put chips in my sandwiches. Made them so much better!) It was amazing and my little boy thought so too!

So there you have it… a burger heaven! Set out all the ingredients in various bowls and let your guests get creative. Let’s see what creations everyone comes up with. Add what you like….bacon, ham, a variety of cheeses, olive tapenade, etc…. Let me know what you came up with and how your burger bar turned out!

On to dessert! A friend told me told me I HAD to try these and come up with a recipe that included them. Well… I don’t know if I should thank or curse her for opening my eyes to these babies. They are that good and hard to resist! And so my friends, this is where dessert starts… at least in part.

IMG_6589Here it is….. Individual Lemon Blueberry Trifle served in perfect serving sized mason jars. And of course they are in keeping with the red, white and blue theme of the holiday. You and your guests will fall in love with the amazing flavors that are combined in this dessert. Lemon and Blueberries…. what’s not to love? They are a breeze to make and easy to transport in these adorable little mason jars. I plan on serving these with red spoons of course! For the full printable recipe, click HERE.

Recipes Shared on Lunchpails and Lipsticks

Boston Cream Cupcakes

 If you like moist, custard filled cupcakes with chocolate…. this is for you! Let’s get started on how to make these babies. Pun intended?

Heat up your milk real good.

Here’s what you will need to start your “oh so good” custard.

Egg yolks only people. Get your separating skills on!

Take some of that hot milk and slowly add it to the egg mixture while constantly whisking. This tempers the egg mixtures so it does not cook the eggs. We want creamy smooth custard, not lumpy egg bits custard. Then do it again.

Now you can add the egg mixture to the heated milk and whisk constantly over medium heat until it is nice and thick.

Once it thickens up, take it off the heat. Add the butter and vanilla extract and whisk until it is smooth. You are going to want to dive in with a spoon at this point, but resist! You will need every bit of this yumminess in your cupcake. Good things come to those that wait…. at least in this instance!

Now it is time to make that batter…oh that batter… It is so paddle licking good!

Just look at this stuff! Don’t you just want to lick that bowl clean? Maybe I am just a batter eating/ loving freak! Just maybe.

No liners for this cupcake. Just make sure you grease up the cupcake pan real good and generous like.

I like to use my ice cream scoop to fill my cupcake pan. Makes life real easy and less messy.

After they bake, take them out of the  pan carefully and let them cool completely on a baking rack.

Here we go… to assembling these beauties! Cut the top 1/3 off and cut a wide cone shaped piece out of the bottom half. Good news… you won’t need those pieces so go ahead and pop them in your mouth and the mouths of your kiddos if yours are like mine and just salivating and waiting for a bite of anything!

Fill them up generously with the custard you didn’t devour earlier because of your amazing superhero willpower.

Drizzle the tops of each cupcake with the chocolate ganache and let it drip freely because that is how it should be.

Breads and Jams Class Recap

These jams were not shown up by their baked friends. They inspired all in class by their ease in making and taste. Mango passion fruit and pineapple lemongrass jam… new flavors that everyone fell in love with. Yum!

Hello Friends,

In answer to your “Please teach another salads class!” I say….”You got it!” With the start of summer, salads are the perfect meal or meal accompaniment. I haven’t got three, but four amazing “Jenny” salads to teach to you in my upcoming class. Fresh, unique, flavor bursting salads! And I could not wait another second to teach my newest dessert creation with you. It will take you to you to a whole new level of dessert “heaven.” Mark my words, you will make this one so many times, your recipe page will be stained and wrinkled….. a sign of true love.

I think these salads scream summer with their fresh and vibrant tastes. They are also ones that are full of healthy, good for you ingredients. Eat to your hearts content! Tastes good and makes you feel good… what a perfect combination!

Santa Monica Restaurant Reviews Part 2

Oh how I loved eating my way through this great town! I found this great cafe on our second day in town. I heard they are packed for breakfast! We came for lunch and loved it!

If I ever owned a restaurant (which by the way, I never will because I don’t want to!), I would want it too look just like this place. Look at this case, such beautiful and delicious yumminess calling my name. I hate making decisions when there are so many good choices!

We had the trio salad plate where we picked three salads of our choice from their freshly made salads case. Kale, Roasted carrots and Farro. Yum! We also had a couple of pastries and a turkey meatball sandwich. It was like having a piece of San Francisco right here in L.A.

Once again, my phone does not do this wonderful bread pudding justice. It was one of the few that my hubby and I loved! Moist and full of flavor….just the way bread pudding should be. If you are ever in this town, Huckleberry is a must!

Our next stop for dinner was a place I have been dying to try for years! Via Veneto…known for authentic, delicious italian food. If you are on a budget, you don’t want to come here as you will pay a pretty penny or two! We ordered quite a few things…. I had to taste as much as I could since I had been waiting to come here for so long. Below are a couple of my favorites.

We started with a sampling of house made raviolis. They were fantastic!

Their truffle risotto was simply amazing! I could’ve eaten the whole dish by myself in a nanosecond. With that all said, the other dishes we had were good but not memorable and wouldn’t bring me back. I am glad to have tried this place but not sure if it was worth it.

Saving the best for last. Tar and Roses… I was over the top in love with this place! Make sure to make reservations or get there right when they open to get a table. By the third night… our last night in town we finally got in. And I tell you…it was worth the wait.

M hubs and I are cheese and charcuterie plate lovers. Have you ever seen a more beautiful charcuterie plate? And the taste surpassed it’s beauty. Simple. Fresh. Goodness. We could’ve stopped with this and been happy but of course I had to taste as much of the menu as I could. The things I do for you people!

These are their balsamic glazed pork ribs. Wow! I died and went to hog heaven! You know I have been working hard to duplicate these babies. I have an amazing version to teach you all soon! We also had an amazing salad I will also duplicate to teach…it was that good! This place gave me all sorts of inspiration….and that is what makes a restaurant over the top good for me! We had more dishes that night, but these were the top picks. I can’t wait to come back here and try more of their delicious creations. I have fallen in love with Santa Monica and all it has to offer. And the restaurants? There are so many I need to stay here for a month to get to them all! Needless to say, we will be back!

Santa Monica Getaway and Restaurant Reviews Part 1

The Third Street Promenade was busy and happening. Lots of street performers and great shops. Not that I like to shop or anything 😉

The first night in town we ate at The Misfit, just around the corner from Third Street. Don’t you just love the name? It did not disappoint!

This is the restaurant from the inside. We sat upstairs and this was the view from our table. I felt like I was in NYC. A very happening and busy restaurant with lots of small tables. It would be hard to accommodate a family of my size! Good thing it was just my hubby and I.

Their roasted brussels sprouts were amazing good. (I apologize for the poor photo quality. I only had my phone to shoot the pictures.)

6photoHow do they make prime rib sliders so good? Such a simple dish but we loved them! I know they don’t look like much but looks can be deceiving. The perfect slider all around.

This is their fried chicken sandwich that we did not order. As soon as I saw this as we were walking out, I had huge regrets! I have to go back to try this. It looked beyond amazing and the waiter said it was his favorite thing on the menu. We had a few more dishes and we loved them all. I highly recommend this gem of a restaurant. Oh how I wish we had restaurants like this in Orange County! After your meal, the waiter comes to your table with a plateful of salted chocolate chip cookies for you to taste. I found the salt on the top of the cookies too salty but I loved the gesture! I will write about some other restaurants we ate at later this week so check back! It was a few days of some seriously good eating!

Hello Friends,

Who said you can’t live on bread alone? With the ones I will teach you, you will want to! Is there a better smell than “fresh from the oven” bread ? I think not! Just ask my family. Not only is homemade bread more delicious than the store bought stuff, but it is better for you and you won’t believe how much $$$ you will save! No… it wont take you days… easy peasy with a bread learning class from me!

You have all been waiting for me to teach my amazing buttery rolls, and people… the time has finally arrived! I love making homemade breads and rolls of all sorts and I am excited to teach these delicious staples (as in you will make them time and time again) to you! By the way, I am calling this class Breads and Jams Class #1 because I know there will be #2 and more!
