    I’m back and ready to teach all you Utah peeps an epic menu! This was a last minute trip so I hope you can swing it! I will be teaching an awesome tacos class at the amazing restaurant Oteo in Lindon on Thursday, March 19th at 5:00. 

    The menu that don’t want to miss out on is: Avocado Tacos with a Coconut Chipotle Sauce, Mahi Mahi Tacos with an Apple Slaw, Peruvian Rice, My Amazing Black Beans, Greens and Apples Salad with a Passion Fruit Vinaigtrette and my Corn Cake with all the fixings!

    Hello Friends,

    Oh how I wish I had the time to teach this before Valentines day because this menu is that special! It’s so versatile though that you can serve it for a special gathering or for your family on any given night. It may sound fancy schmancy, but it’s not hard to make and even pleases the kids. Now that is what I call a winner! I am so excited to teach this one to you all… and watch your eyes roll to the back of your head with delight as you bite into each dish!

    If you aren’t familiar with celery root or parsnips… you will fall in love with them after this class! And they are found in your local grocery store. No driving to a specialty market for these ingredients. I wouldn’t do that to you! These also go great with chicken, steak or on their own. Perfect additions to any meal! I tell you… versatile!

    The amazing menu this month is: Seared Salmon with a Cranberry Orange Glaze, Celery Root Puree, Creamy Parsnip Soup, Brussels Sprouts Salad and for the big finish…… A Salted Caramel Creme Brûlée! Seriously people.. this menu is pure heaven from start to finish!

    This would make an awfully great date night! Right now, I have added this class on Friday the 27th.

    My limit for each class is 18 people. I first demonstrate how to make all the dishes and then we feast! So come hungry! The cost of each class is $65.00 per person. Let me know if you are interested and I will contact you with more information about the class and tentatively put your name on the reservation list. When I receive your check, I will reserve your spot (31801 Via Perdiz, Coto de Caza, CA 92679, Checks made payable to Jenny Evans).     After taking a 2 month break from teaching classes,  it sure was fun to get back into it! Grateful to all that came. It was a popular class and menu!

    Teaching and feeding my classes these delectable tacos and my Black Bean and Sweet Potato soup made for an enjoyable evening for all! After all… who doesn’t like Mexican food, right?

    I seriously can’t pick a favorite from the three tacos I taught. I mean come on… look at these Mahi Mahi tacos with my Pico de Gallo, Simple Guacamole and Apple Slaw. Yes.. they are as good if not better than they look!

    And last but certainly not least, we learned how to make these melt in your mouth Braised Short Rib Tacos with a Roasted Poblano Sauce. Again… no words!

    Hello Friends,

    Tacos people… tacos! I am a bonafide taco lover. Especially these tacos! Why do I love tacos? You can pack a myriad of flavors in one bite and boom… magic happens. Do you get what I mean? The savory, with the sweet, with the tangy, with a little bit of spice. Wow.. and in just one bite! And if you ask me.. tacos are light. No matter what you choose to put in your taco, there isn’t a load of it in this perfect package. Just a little bit of everything. Yup.. a lot of bang for your buck so to speak. And… tacos are great any time of the year. It’s not a summer, winter or fall food. It’s all of them! This class is my tribute or celebration of one of my all time favorites… tacos! After all.. who doesn’t love tacos?

     

    Another favorite of mine is fusion food done right. These tacos I created definitely fit that bill. Creative but deliciously so. I am talking about “over the top” delicious! I am so proud of these creations… and can’t wait to share the goodness with you all! And the soup… yup.. definitely creative, fusion, deliciousness that leaves you asking, “What is in this soup? It’s so good!” (Actual quotes from my soup tasters.)

     

    I am letting you in early on this class info. because with the holidays around the corner… I know it will make the perfect gift! The class is not until January so gift it… calendar it.. and look forward to it!

     

    Here’s what is on this tacos done right menu: Mahi Mahi Tacos with Pico de Gallo, Guacamole and Apple Slaw, Braised Chipotle Short Rib Tacos with a Persimmon and Mushroom Saute, and a Roasted Poblano sauce, Panko Avocado Tacos with Pickled Carrots and a Coconut Chipotle Sauce and a Black Bean and Sweet Potato Soup. Healthy never tasted so good!

     

    This is Mexican done right! They may sound complicated but they are not. No difficulty here. I will show you how easy it is to make these impressive meals. Goodbye boring same old, same old… 2015 will start off right with meals like this!

  • Jenny’s 2nd Annual Super Gathering!

    Last week I had a special cooking class night where I had the pleasure of having a group of beautiful, talented and sweet ladies over. They all either have a small business, successful blog, is an author or have a talent they share with others.

    I taught them all my Fall Menu. Can I tell you the dishes on this menu is phenomenal? Because it is.. it really is. A perfect menu for a “Friendsgiving” meal or new sides and dessert for Thanksgiving. It was a fitting menu!

    Let’s talk food for a minute (I will have better food pic’s in my next Fall Menu Class Recap, but these are a good teaser!). We had pan seared Pork Chops with a Honey Soy Glaze. I have to give a huge shout out to my two amazing assistants for the night… Lauren Parks and Fawn Dean! I couldn’t have done this without them!

    I made some new friends like this beauty, Chelsey. She drove all the way from Los Angeles on a Friday night… now that’s love people! But seriously.. how adorable is she?!

    It was nice to see “already” friends like Ali who is moving away next month. So glad I got a chance to see this amazing girl again!

    Some of the girls brought their “goods” to give away in a SWAG bag we got at the end of the evening. And guess what? One lucky winner will get a SWAG bag like we got in a giveaway I am having starting tomorrow! Let’s hear for free, awesome stuff!

    Hello Friends,

    I know a lot of you have missed out an some of my epic classes I taught in the past. I am bringing back one of the all time favorites just for you… all you breakfast lovers! With summer right around the corner and the kids home … you can make them oh so happy with this menu! I am going to teach you some of the very best breakfast dishes around! My first breakfast class encore.

    The menu I am teaching is so worth teaching again! Here’s what’s going down: Lemon Cottage Cheese Pancakes. Homemade Blueberry Syrup, Mexican Chilaquiles (my personal favorite!), Fontina Cheese, Smoked Ham and Egg Breakfast pizza, and my almost famous Cinnamon Swirl Bread (Not pictured but oh so easy to make!).

    These dishes are perfect for everyday or for special occasions. My family always requests my breakfast pizzas for Christmas morning. A huge pleaser!

    I will be teaching this class on Wednesday, June 18th and Thursday, June 19th at 5:30.

    Hello Friends,

    Oh Yes… Summer is coming and you know what that means. My grilling classes! These are oh so popular, fun and make the perfect date night. We take the classes outside and eat under the stars via candlelight. These are some of my absolute favorite classes and I know they are yours too!

    You are all going to flip over this menu! We are talking about outrageous Mexican food. You will want to make these dishes all summer long. Take my black beans for example… they are unreal. I mean REALLY unreal… like nothing you have ever had before. And who doesn’t love a good Pollo Asado? That should be a staple in everyone’s meal rotation…. a real crowd pleaser. Trust me when I say that you are going to fall head over heels in love with this menu. I am excited to share and teach it to you!

    On the menu for this mouthwatering class: Grilled Pollo Asado, My Amazing Black Beans, Cilantro Lime Rice, Caprese Salad… Mexican Style and a Fresh Mango Tart for dessert. Because mangos are heavenly!

    Hello Friends,

    Ok… this is a class that has been requested for two years now. Better late than never… right? For those of  you that have known me a while, you know that I make some pretty amazing cupcakes! It is time to share some of my beloved cupcake recipes with you! Not only will I be sharing my recipes with you, I will also have tips that I will share with you as well. I will also teach you how to frost beautiful cupcakes in a variety of ways. In fact, you will get to frost your own cupcakes.

    Knowing how to make beautiful and delicious cupcakes for parties, showers, luncheons, etc… will come in so handy and make you the star of the party! Come join the fun and learn in this fun “workshop” class.

    The flavors I will be sharing with you are: Cinnamon Oatmeal with Cream Cheese Frosting, Lemon Meringue with a lemon curd filling and a Chocolate and Peanut Butter cupcake. All crowd pleasers!
