Quick Dinners 2 Class

I am doing it again… Quick Dinners round two! My first one was so popular and became your go to recipes for your families. So here we go again with new dishes to add to your quick dinner nights!

Pizza…. a favorite of most everyone! You will be able to make this whole pie (including the made from scratch dough) in less time than ordering one for delivery and getting it to your home. And it will taste thousands times better!

Pasta Carbonara. Another family favorite! So creamy, full of flavor and satisfying! This is one of those dishes that your family will not just eat, but will “inhale!”

These Spinach and Feta Stuffed Pork Chops are not only fast to make, but look fancy enough to serve on special occasions. You will love everything about this one!

Carnitas Calzones…. yes they are just as amazing as they sound. Mexican/ Italian fusion…. it is a match made in heaven! And not pictured is the last dish… Soy Honey Chicken. A nice light dish, but heavy on flavor!

I am doing it again… round two… Quick Dinners! This is the number one requested class ever. Life is busy and we all want to make a nice homemade dinner for our families, but I know… time is short! We don’t want to skimp on the taste or the presentation and you won’t be doing either with these dishes. In fact, these dishes will wow anyone lucky enough to be at your table. 

These tasty mains can be made in 30 minutes from start to finish, give or take 5 minutes. Now that is faster than ordering a pizza and getting it to your house! And yes… that includes the “made from scratch pizza dough”, rising time, assembling and baking. Can’t you just smell it now? Mmmmmmm!

The fabulous menu for this popular class is: My Fast and Delicious Pizza (one of my frequently made favorites in our home), Pasta Carbonara, Soy Honey Chicken, Spinach and Feta Stuffed Pork Chops and Carnitas Calzones. My family are BIG fans of each one of these dishes and you know they are my biggest critics!

With life being over the top busy in December, I decided to only hold this class on one day. But it sold out instantly! So why am I letting you know about it then? Because I am a softy and will add a day if there is enough interest in the class on the date I will add. 

The class is being held on Thursday, January 9th at 5:30 (sold out, but you can be put on the wait list in case of cancellations). If their is enough interest, I will add Friday, January 10th at 5:30. You know the routine… email me if you are interested!

My limit for each class is 16 people. I first demonstrate how to make all the dishes and then we feast! So come hungry! The cost of each class is $60.00 per person.  Let me know if you are interested and I will contact you with more information about the class and tentatively put your name on the reservation list. When I receive your check, I will reserve your spot (31801 Via Perdiz, Coto de Caza, CA 92679, Checks made payable to Jenny Evans). My classes are filling up really fast so please let me know if you are interested before you send me a check to make sure there is an open spot. For cancellations, I require a “10 days before the class” notice for a refund.

I have had a lot of requests for private classes. I have taught gatherings for birthdays, couples classes, or just someone that wanted to learn a past menu and got a group of friends together to learn. I love doing these party- like classes and talk about a good time! Please feel free to contact me anytime if you are interested in doing such a class. I require 16 people for a private class.

Heavenly Hot Chocolate with White Chocolate and Peppermint Stir Sticks

This time of year, one of the best treats to warm your soul and tummy is my Heavenly Hot Chocolate served with these White Chocolate Peppermint Stirring Sticks. 

They are both a snap to make and your friends and family will love you for it. As I tell my friends… drinking my hot chocolate is an “experience!”

To get started, you will need full sized peppermint candy canes. The most labor intensive part is unwrapping each candy cane, but I found that unwrapping them this year was a breeze… thank you candy cane companies for making it a much less frustrating experience!

Next, I cut my candy canes instead of breaking them and they cut perfectly and exactly where I wanted ( I use Cutco scissors). I cut them right across from the end of the cane part to get them all the same length. I then put all the curved cane parts in the food processor to get finely crushed. 

Take your white chocolate pieces or chips and melt them (Make sure you melt enough chocolate to dip the marshmallow in. It should be at least a couple inches deep if not deeper). I microwave mine in a glass measuring cup (I start at 1 minute and add 30 second increments at a time until they are melted. You have to stir with a little spoon or spatula to check if they are melted through as the chocolate holds it’s shape even when melted). 

Take your candy cane sticks and pierce a full sized marshmallow with it making sure it stands straight. Some marshmallows in the bag do not have a flat top and bottom. Make sure to use ones that are flat and will stand straight when pierced with a peppermint stick (Jet Puff brand has better shaped marshmallows than the generic brands).

Dip the marshmallow in the white chocolate making sure to remove some of the excess chocolate, rotating it around the sides of the bowl.

Immediately roll it in the crushed candy canes, making sure to cover the bottom and sides.

Place on a parchment lined surface to cool and harden.

Serve these with my amazing hot chocolate and some gingerbread men on the side, snuggle up by a warm fireplace and enjoy the season at  it’s best!

Good Things Utah Segment…. Truly a Good Thing!

Before the segment, Troy (One of the show’s hosts) came over to say “hello” and can I tell you what a hoot he is?  He had me rolling! Lucky me.. he was also with me for my segment! Gretchen and Nisha, the other two hosts also came over to introduce themselves and I loved each and every one of them. It was like a party being around them!

My sweet hubby came to help me. I don’t know what I would’ve done without him! First of all, we woke up to a snow storm and icy, dangerous roads. I don’t think I could’ve driven myself there. He also helped with all the prep I had to do before the show. Don’t know how I got so lucky when I captured his affections!

Private Class/ Dinner Party and New Recipe!

THIS happened last week! A private cooking class/ dinner party with these fabulous ladies! A perfect girls night out. I invited these ladies over with the gals from Lunchpailsandlipstick and together we had a ball. A most delicious ball! These talented ladies are the brains and success behind Ascot Friday (Laura also does Target Does It Again and Ascot & Hart), Saint Eve Jewelry, Nena and Co., Lunch Pails and Lipstick, Rachel Thurston Photography and Morgan Smith from Bugaboo. Goodness these ladies are beautiful, over the top creative, talented, incredibly sweet and fun to be around! Be sure to check out their websites, blogs, and or instagrams! Gingerbread Men… A Holiday Tradition

Gingerbread Men

At our home, making these gingerbread men is a yearly tradition. It actually started when I volunteered to make them for my kid’s kindergarten classes when they were reading about The Gingerbread Man. As a class, they made one big gingerbread man and took it to the school kitchen to bake it. When they returned to the kitchen to get the gingerbread man after it was fully baked, they discovered it was missing. It had run away! Off the class went to find the runaway gingerbread man throughout the school. After being told about the many gingerbread man sightings… it eventually led them back to their classroom where the baked big gingerbread man was found along with a gingerbread man cookie for each student. I loved to make these and the big gingerbread man for the classes throughout the years. My kids loved getting into the decorating action and it became a favorite yearly family affair. 

I didn’t always like gingerbread men. Most were dry and not very tasty. So I sought out to make good ones. Ones the kids would love to eat as well… as they can be the most picky. Here is my recipe and I hope you enjoy it and make this your family holiday tradition too. Just make sure to keep an eye on the oven as they bake….. or they may just run away! Mischievous little guys!

Here are the ingredients you will need.

Give them a good mix. Smells wonderful!

IMG_7134Take half of the dough and form it into a round disk and place on a well floured surface. Make sure to flour the top of the dough too before rolling it out. You will roll it out to about 1/4 inch thickness. I like mine soft and thick. 

IMG_7137Cut out as many as you can (my younger son did all the cutting out). Re- roll the dough and repeat. Do this for the other half of the dough left in the bowl. I use a thin, well floured spatula to transfer the unbaked gingerbread men to a cookie sheet.

Be sure to lay a piece of parchment paper on your cookie sheet first. These bad boys are ready to hit the heat. In the oven they go!

The fun part…. decorating them! I put the icing in a pastry bag to make decorating them easier. Two eyes, a smile, buttons and all the trim. Teamwork!

We love the taste of M&M’s much more than red hots, but you can use what you like for the buttons. I also love the pop of color they give.

Good Things Utah!

For those of you that live in Utah or those of you that have friends and family there…. I will be on this fantastic morning show this Thursday, December 19th at 9 am on ABC! I will be teaching a delicious dish that would be perfect for your Christmas breakfast. I don’t know about you, but for me and my family, Christmas breakfast is kind of a big deal…. as in it has to be extra delicious! I hope you tune in to watch me this Thursday!
