Pre Wedding Dinner

Yes… I realize that I have been M.I.A on this blog, but I have had a good reason…. I promise. This cute couple is the reason why I haven’t been on my blog posting away. This is my son and his then fiancé… now wife! I made dinner the night before their wedding for about 50 family members and close friends of the families. I thought a good way to come back is to share the night with you all!

My sweet and talented sister in law did the floral pieces and table scape. Did I mention that it was 100 degrees this particular day? Crazy heat wave we had out of no where! That is love people! The outside tables were gorgeous and the night was dreamy.

So how, do you ask does one make dinner for so many people? You start days in advance! Three days before the dinner, I shopped for all the ingredients, made the salad dressing (A whole lot of it!), the pesto that I stuffed in the salmon, and did all my chopping for any salads or vegetables. Two days before, I baked all the cupcakes and kept them in sealed cupcake holders that kept them perfectly moist. I also baked the french bread that I used for the crostinis and made the hummus. The day before the dinner, I frosted and decorated the cupcakes, cut up the tomatoes for the salmon and strawberries used in the salad and candied the nuts for the salad. The day of the dinner, I made the quinoa salad (with the veggies I prechopped on Monday), baked the honey whole loaves, and finished the crostinis. 

This shot was taken an hour or so before everyone started to arrive. We set out the cupcakes, the beginnings of the crostini (that was still awaiting more toppings), platters for the veggie and hummus appetizers and the huge salad bowls. It is helpful to get everything out that you will be serving food in in advance. That way, you get a feel for how everything will look and it helps you organize what needs to be done. It’s so easy to forget to set out a side dish or appetizer when you are serving so much food!

Samantha loves my Smashed Avocado Crostini’s so that is what I served as an appetizer as everyone was arriving and mingling.

I also served my hummus with fresh veggies and pita chips. You can find the recipe on this blog… and if  you haven’t made it yet…. trust me.. you need to!

Here’s what was on the menu this night. Pesto Stuffed Salmon with Roasted Tomatoes, Quinoa Super Salad, Hawaiian Inspired Salad with a Papaya Vinaigrette, Honey Whole Wheat Loaves and some delicious cupcakes for dessert!

When deciding what to make for dessert for this many people… I realized I would not have refrigerator space for anything other than what I was making for the dinner. So I knew cupcakes would be perfect! Everyone loves cupcakes… especially when there is a variety to try. I love the look of them… especially on pretty stands. They double for decoration!

These ones are Lemon Meringue. I also made Chocolate Peanut Butter and Cinnamon Oatmeal. Yes.. they were the perfect ending to a great meal if I do say so myself!

We ended the night going around the room where everyone shared wedding advice to the soon to be “Mr. and Mrs.” Sorry for the poor picture quality. This was taken with my phone. 

What a great night it was to have family and close friends join together to celebrate the this sweet couple! You certainly couldn’t have recreated this atmosphere at a restaurant. It made all the work so worth it! Nothing brings people together better than having gatherings of any sort… big or small. 

My last piece of advice is to do something I forgot to do this night! Hire a couple of people to clean up and wash the dishes. Good thing I have a terrific husband that doesn’t mind rolling up his sleeves and washing dishes… because there was A LOT of them!

Hello Friends,

Ok… this is a class that has been requested for two years now. Better late than never… right? For those of  you that have known me a while, you know that I make some pretty amazing cupcakes! It is time to share some of my beloved cupcake recipes with you! Not only will I be sharing my recipes with you, I will also have tips that I will share with you as well. I will also teach you how to frost beautiful cupcakes in a variety of ways. In fact, you will get to frost your own cupcakes.

Knowing how to make beautiful and delicious cupcakes for parties, showers, luncheons, etc… will come in so handy and make you the star of the party! Come join the fun and learn in this fun “workshop” class.

The flavors I will be sharing with you are: Cinnamon Oatmeal with Cream Cheese Frosting, Lemon Meringue with a lemon curd filling and a Chocolate and Peanut Butter cupcake. All crowd pleasers!

Tuesday’s Tools and Tips – Keeping Chopped Lettuce Fresh

I am teaching salad classes this week, so I thought a great tip to keep lettuce fresh all week long, especially with summer around the corner, would be perfect. We’ve all been there. Wanting to be prepared for the week…. we chop and bag lettuce for salads. (If you have lettuce cleaned, chopped and ready to go… you will eat more salads. Am I right? You know I am. I love to be right! :)) But you find your lettuce has wilted and/or has browned edges after a day or two. How do you keep your lettuce crisp, fresh and keep the leaves from browning? Who wants to eat lettuce that is browning? I have heard and read many tips on how to keep your chopped lettuce fresh… but this my friends works and it is so simple!  I have been doing these steps for years with the perfect results!

Step 1:

You must cut the lettuce with a very sharp knife! If you use a dull knife, you will bruise the leaves when you cut them and they will brown quickly!

Step 2:

You need a salad spinner. Getting all the extra moisture off the freshly cut leaves will keep the leaves nice and crisp. I love my OXO salad spinner

Step 3:

I store my chopped lettuce in heavy duty freezer Zip Loc gallon size bags. In they go!

Step 4:

Zip the top of the bag about 2/3 of the way shut.

Step 5:

Squeeze as much air as you can out of the bag with your hands. I press down on the top and upper sides of the bag.

Step 6:

 I then zip the bag all the way shut…. careful to not let any air in the bag.

And there you have it! How easy was that? No paper towels are involved. My lettuce will stay this fresh and crisp for a week using this quick and easy process. With not a hint of any brown edges.  Make sure to do steps 4-6 every time you open the bag to keep the lettuce fresh. Keeping air out of the bag is key. Here’s to salads and fresh, crisp lettuce ready at our fingertips! Is it summer yet?

Tuesday’s Tools and Tips- Mother’s Day Gifts Ideas

Mothers day is right around the corner. What are you going to get the most special lady in your life? No worries…. I’ve come up with a list of great gift ideas! For the lady/mom in your life that loves to cook or wants to be a better cook… these are sure to bring a smile to her face.

A really good knife! What a difference a good knife makes. This one pictured is a Miyabi Artisan SG2 9 1/2  inch that I use and love. With a knife like this… your mom or wife is sure to want to cook more! I bought mine HERE.

Ceramic bakeware is not only wonderful to bake with but it is also so pretty to serve in. And the clean up is a snap! Things just don’t stick to glazed ceramic. I found ones similar to mine here. Here is an another good alternative.

A pasta roller is something you don’t realize how much you need until you have one! Homemade pasta is to die for! I highly recommend you buy one that is made in Italy. You can find a good one here.

And you definitely need  this with your pasta roller! So handy, easy to store and inexpensive. This particular one is my favorite pasta rack out there! You can find this one here.

There are so many amazing desserts you can make and serve in these basic and stackable ramekins. I found mine here.

And the creme de la creme… the best stand mixer out there! I will put this on every wish list because I know most everyone that attends my class wants this unless they already have one! The best source I have found for this amazing, own forever stand mixer is here.

In my opinion… everyone needs a panini maker! Fastest and easiest way to a grilled cheese or hot gourmet sandwich. Best way to get dinner on the table in no time. I found mine here.

S’mores Bar Recipe

Soups and Bars Class Recap

 Let me start off by saying how I am lucky to have the opportunity to teach these classes that are so much fun…. not only for you all but for me too!

I cut up some amazing sirloin steaks for the soup. And we let them simmer until they were practically melting in your mouth.

Hello Friends,

Here it is…. probably my most popular class! Another Jenny’s Salads class PLUS an amazing dessert to balance it all out 😉 May came upon me so fast so I apologize for the late notice! But no worries….. I am offering two different weeks to accommodate everyone.

 You know how amazing my salads are and come on…. a great salad is probably one of the best meals. I’ve come up with three different salads that you will love (sorry that only two of them are pictured above)! These will get you out of your salad rut and be the perfect meal or side in the coming warm months. As a bonus, I am teaching another amazing bread. I have been saving this one for the perfect pairing and this is it! Seriously… you are going to fall in love. And the dessert? Well… it doesn’t need any words. Doesn’t the picture just tell all? For those of you that follow me on Instagram, you know how long I have been working on this sweet, dreamy dessert. It is ready to make it’s debut in this much looked forward to class!

On the menu for this amazing class: Ricotta, Arugula Salad with a Fresh Lemon Vinaigrette and Zucchini and Squash Ribbons, An Amazing Salad I like to call my Super Quinoa Salad… again no words, Island Chopped Salad  (Not pictured bc we devoured it before we remembered to take a picture… oops!) with so many good things… trust me on this one, Honey Whole Wheat Loaves and for the heavenly finish… my Butter Cake with a Strawberry Sauce!

 Is your mouth watering yet? Mine is! I will be teaching this class on Thursday, May, 1st, Wednesday, May 7th and if there is enough interest I will also teach this on Thursday, May 8th. All the classes will start at 5:30 pm.

My limit for each class is 18 people. I first demonstrate how to make all the dishes and then we feast! So come hungry! The cost of each class is $60.00 per person.  I have had a lot of requests for private classes. I have taught gatherings for birthdays, couples classes, or just someone that wanted to learn a past menu and got a group of friends together to learn. Tuesday’s Tools and Tips- Fresh vs. Dry Herbs

It happens to all of us. We are in the middle of a recipe, to only discover that instead of fresh basil that the recipe calls for, we only have dried basil. What to do? In most cases, like a pizza sauce, you can substitute dried herbs for fresh ones. But you have to reduce the measurement called for! Why is that? Because dried herbs are more concentrated in flavor than fresh ones. If the recipe calls for 1 tablespoon (there are three teaspoons in a tablespoon), you will only add 1 teaspoon.  So if you ever find yourself out of fresh rosemary, oregano, thyme, sage or any other fresh herb, you can usually substitute it with 1/3 of the amount called for with the dried version. 

When does the dried version not work? Typically when adding the herb to finish the dish. Dried herbs need time to cook and infuse into the dish, such as sauces or soup. Often I will add fresh basil to the pizza after I take it out of the oven or use it as a garnish. You definitely need fresh not dried herbs to garnish any dish. You also need fresh herbs such as basil when making a pesto sauce where the ingredients are pureed, not cooked. 

I hope this helps and saves you a quick and unnecessary trip to the store when you find yourself in this predicament. As I always tell my class, “It’s ok…. It’ll be fine!” At least that is true most of the time. And when it’s not… a quick trip to the store isn’t the end of the world. Just crank up those tunes in the car… a little car dancing is good for the soul!

Private Class Fun

 I taught a private cooking class last night for this couple and some of their clients last night. They wanted a fun night out with their clients this was the perfect thing! P.S. Good looking couple, don’t you think?! P.P.S. Still teaching with my boot but I am off my crutches….. Yay!

Tuesday’s Tools and Tips- Bosch Mixer or Kitchen Aid

I cannot believe I haven’t shared my opinion on these mixers earlier with you all! (Outside of my cooking classes that is.) Better late than never…. right? I know that most people have or want this mixer. A Kitchen Aid stand mixer, that they offer in a variety of colors. This is one kitchen appliance that is commonly seen on many kitchen counters. After we built our home, I too bought a Kitchen Aid professional series mixer in the color I have wanted for years. They cost a lot of money but I was sure I was going to just be in mixer heaven! Well…. that feeling lasted about a day or so. Why? Well, if you bake as much as I do, you will quickly find that the motor in this brand cannot handle much for too long before it over heats and gives up or breaks. That was not what I expected from my “professional series” expensive mixer! That’s not very professional at all! I also could not believe how loud this mixer was. Crazy loud! It actually got on my nerves every time I turned it on.  

After a couple of frustrating months, my hubby and I researched mixers that could handle my baking needs. I was done with my Kitchen Aid mixer and never wanted to see it again. I bake 8 or more loaves of bread a week for our family among many other things. Pizza dough, rolls, french bread, cookies, cakes, etc….. We thought a commercial mixer was our only option. The problem with those are the size of them. Where in the world would I keep it?

One day my hubby came upon a site (Pleasant Hills Grain) that sold the Bosch stand mixer and stated that they tested it by making batches of dough one after another for 24 hours and it never overheated. It was a workhorse! Could it be true? Could a mixer like this really exist?? We quickly ordered it and boy oh boy did I ever put it to the test. It cost less than the Professional Series Kitchen Aid and shipping was free. It doesn’t come in a variety of colors and is not the prettiest mixer, but I cannot tell you how much I love this mixer! I can mix and knead dough for as long as I want or need to and this baby never overheats or needs a break. And the power? Sheesh… this mixer is so powerful! Beats up egg whites or whipping cream in lightning speed. 

I know many a people that have inherited a Bosch stand mixer from their grandmothers and they still work perfectly. I have to hand it to this company. They make these to last forever! I don’t know of any other appliance that a grandparent can hand down that works just a good as when they got it. That’s quality people! 

Those that attend my cooking classes know of my great love and confidence in this amazing machine. In fact, Pleasant Hill Grain has done a Bosch mixer giveaway with me twice so far. I hope to keep that a yearly tradition!

So for those of you that are in the market for a stand mixer and are on the fence as to which brand you should buy…. get off the fence and get a Bosch! This is seriously one of my favorite things in my kitchen. I don’t know how I would survive without it. It will be the last mixer you will ever buy…. made to last I tell you. Take my word for it and you will thank me later… I guarantee it!

By the way, I am not getting paid by anyone for this review. This is an honest to goodness opinion from a serious baker that seriously loves this mixer! There are two things in my life I can always count on… my husband and my Bosch! Now that’s true love.
